Nothing like biting into a freshly baked cupcake with creamy frosting, is there? (Frosting. Sounds so much better than icing, doesn't it? :0) Lots of people like decorating cupcakes elegantly - don't get me wrong, I do too, but sometimes I just can't resist the temptation to sprinkle hundreds and thousands all over these pink cased sweethearts. And they're not hard at all to make either! I got this recipe from Nigella Lawson's cookbook "How to be a Domestic Goddess".
You need:
125g unsalted butter, softened
125g caster sugar (or normal - they still taste good!)
2 large eggs
125g self-raising flour
1/2 teaspoon vanilla extract
2-3 tablespoons milk
*For the frosting I just make either butter or icing sugar mixtures
Preheat the oven to 200oC/gas mark 6
Just put all the ingredients except for the milk in the processor and then blitz till smooth. Pulse while adding milk down the funnel, to make for a soft, dropping consistency. It looks as though you'll never make this scant mixture fit 12 bun cases, but you will, so just spoon and scrape the mixture to fit each case equally. Put in the oven and bake for 15-20 minutes, or until they're cooked and golden on the top. Ice when cooled and enjoy!
